The Friendly Viking Food Cart is a mobile vendor that provides hearty Minnesotan cuisine at community events. The goal of this project is to spark curiosity, warm bellies, and build community by sharing recipes from Fitterer’s childhood with others.

For its debut at Made In Camp on October 8, 2022, the cart served the Camp Washington neighborhood in Cincinnati, OH with Fitterer’s all-time favorite dish: Tator Tot Hotdish.

Tator Tot Hotdish

Ingredients:

• 1lb ground beef or ground plant-based ‘meat’

• 1 1/2 cups mixed veggies

• 1 can cream of potato soup

• Tator tot

Instructions:

• Brown your meat of choice, cook mixed veggies (if frozen), and combine both ingredients with cream of potato soup in a large mixing bowl

• Portion in muffin tin or baking dish and top with tator tots

• Bake at 350 degrees until golden and bubbly (approximately 40 minutes)
